High Fructose Corn Syrup 55
High fructose corn syrup 55 (HFCS 55) is a type of sweetener derived from corn starch. It is a liquid sweetener that contains approximately 55% fructose, with the remaining sugars being glucose and other carbohydrates. HFCS 55 is commonly used as a sweetening agent in various food and beverage product.
High fructose corn syrup (HFCS), also known as glucose–fructose, isoglucose, and glucose–fructose syrup, is a sweetener made from corn starch. As in the production of conventional corn syrup, the starch is broken down into glucose by enzymes. make HFCS, the corn syrup is further processed by D-xylose isomerase to convert some of its glucose into fructose. HFCS was first marketed in the early 1970s by the Clinton Corn Processing Company, together with the Japanese Agency of Industrial Science and Technology, where the enzyme was discovered in 1965.
Features
- Composition: HFCS 55 contains 55% fructose, 42% glucose, and a small amount of other sugars and water.
- Liquid Form: It is a liquid sweetener, making it easy to handle and incorporate into various food and beverage applications.
- Sweetening Power: HFCS 55 is sweeter than regular corn syrup and has a sweetness level similar to sucrose (table sugar)
- Hygroscopic Nature: HFCS 55 has hygroscopic properties, meaning it attracts and retains moisture. This characteristic can impact the texture and shelf life of products in which it is used
Benefits
- Sweetening Properties: HFCS 55 is used as a sweetener in a variety of food and beverage products to enhance sweetness.
- Extended Shelf Life: It can contribute to the extended shelf life of certain products, as it helps prevent crystallization and maintains product stability.
- Cost-Effective: HFCS 55 is often more cost-effective than sucrose, making it an attractive option for manufacturers looking to achieve sweetness at a lower cost.
- Texture and Moisture Retention: In certain applications, HFCS 55 can contribute to the texture and moisture retention of food products.
Applications
- Soft Drinks: It is a common sweetener in carbonated beverages.
- Baked Goods: HFCS 55 is used in the production of baked goods such as cakes, cookies, and pastries.
- Processed Foods: Many processed foods, including sauces, dressings, and condiments, may contain HFCS 55 as a sweetening agent.
- Dairy Products: Some dairy products like flavored milk and ice cream may include HFCS 55.
- Preserves and Jams: HFCS 55 is used in the production of preserves, jams, and fruit spreads to enhance sweetness and preserve quality.
